Ingredient Allergen Review

Please review the ingredients used in your dry packs to make sure you or someone else in your family is not allergic to anything on this list. Some of the more common allergens are listed in bold.

🍝 All pasta in this program is specified as whole wheat, which is best for blood sugar management. If you need a gluten-free option, brown rice pasta works as a substitute — however, please note that meals made with gluten-free noodles do not freeze well and should be eaten fresh.

Create Your Immersion Pantry

Find a shelf, a drawer, or a corner of your kitchen cabinet and clear it out. This is going to be your Immersion Pantry — a dedicated spot where all your immersion ingredients live together in one place.

💡 A simple label — even just a sticky note that says "Immersion Pantry" — helps the whole family know this spot is off-limits for other groceries.

One Simple Backup: Kim's Loaded Baked Potatoes

Before your immersion begins, bake some potatoes and keep them in the fridge as a back-up meal. These keep for 3-4 days, so you can do the same midway through the immersion if you like.

  • 3 cups cooked broccoli florets or other veggies
  • 1 can (15 oz) black beans, drained
  • 1 cup salsa
  • 1 cup guacamole or 1 avocado, sliced

To Prepare
  • Bake potatoes at 400°F for 50–60 minutes until tender. Store extras in the fridge.
  • When ready to eat, reheat a potato in the microwave (2–3 min)
  • Sauté or microwave broccoli until tender
  • Top with beans, veggies, salsa, and guacamole
😊 Most people are genuinely surprised by how much they enjoy every meal in the immersion — this backup is rarely needed. But having it ready removes any anxiety about being stuck.

Set Up Your Meal Plan

Before you go shopping, open the Meal Plan tab and configure two things:

How many people are you cooking for?

Set your serving size in increments of 4 — the default is 4 servings, which covers dinner for 2 people and provides leftovers for their lunch the next day. If you are cooking for more people or want additional leftovers, increase to 8 or 12 servings. Your grocery list updates automatically.

Planning to freeze leftovers?

Most of these meals freeze beautifully. Store leftovers in silicone freezer containers or freezer bags — label and date each one. The exception: gluten-free noodles, such as brown rice noodles, don't hold up well after freezing.

Buy Your Fresh Ingredients

One to two days before you begin your immersion, purchase the items on your grocery list. Buying them close to when you'll cook ensures the best quality and reduces waste.

Store all starter packs in the refrigerator.

Once assembled, all starter packs must be kept refrigerated. They will keep for up to two weeks in the fridge, or up to three months in the freezer.

Use each pack whole — not just part of one.

The dry ingredients settle into layers, so a finished pack isn't evenly mixed. Measuring out only half (or any portion) can leave the seasoning unbalanced and change how the dish tastes. Whenever a recipe calls for a pack, use the entire pack.

Sides and Breakfasts

Simple, nourishing plant-based breakfasts for each day of your immersion.

There are a variety of healthy breakfast options — including oatmeal, cold cereals like Shredded Wheat or Ezekiel, whole grain toast, scrambled tofu, and granola. Choose whatever appeals to you each day. Recipes are below.

🥗 Sides & Salads

Every main dish should be accompanied by a side vegetable or salad. When making a salad, use a variety of greens and cut veggies. If you're in a time crunch, salad kits work great — load them up with shredded carrots, purple cabbage, cucumbers, peppers, and cauliflower. Store prepped salads in large airtight tubs for easy access all week.
Cooking sides without oil: Sauté using a nonstick or stainless steel pan. Get the pan hot, add veggies, and use 1–2 tablespoons of water, vegetable broth, or vinegar to deglaze as needed. For roasting, season veggies in a zip-lock bag, shake to coat, and spread on parchment paper — do not overlap.

🫙 Salad Dressings

We recommend making a salad dressing at the start of your immersion week and storing it in a mason jar. An oil-free dressing lasts 3–5 days in the fridge and makes every salad effortless.

As we follow them through the immersion, we hear of past struggles with the disease and watch firsthand as they shift from a standard American diet to a whole-food plant-based diet — achieving unexpected and astounding results. Their stories open the door to wider conversations about nutrition, chronic disease, immunity, and the Covid pandemic, charting a hopeful pathway for people wanting to live free of disease and costly pharmaceuticals.

The Science Behind the Program

Five things the science tells us about food and health — in plain language you can share with anyone who asks why you're eating this way.

1. Whole food, plant-based nutrition is the best-documented way to prevent and reverse chronic disease.
Decades of peer-reviewed research — including Dr. T. Colin Campbell's landmark China Study — consistently show that a diet centered on whole plant foods reduces the risk of heart disease, type 2 diabetes, and many cancers.
2. Animal protein promotes cancer growth. Plant protein does not.
Dr. Campbell's research demonstrated that casein — the main protein in cow's milk — consistently promoted tumor growth in laboratory studies. Plant proteins showed no such effect.
3. Your body can heal faster than you think.
Many people experience measurable improvements in blood pressure, cholesterol, and blood sugar within days of switching to a whole food plant-based diet — not months.
4. You don't need to count calories or go hungry.
Whole plant foods are naturally lower in caloric density and higher in fiber and water content. Most people eat satisfying amounts and still lose weight — without tracking a single calorie.
5. Seven days is enough to begin changing your biology.

Your program includes biometric measurements (weight, blood pressure, and other measures) taken before and after the immersion. Results are confidential and shared only between you and the testing clinic — they are not stored in this app.

Baseline test: A weekday appointment in the week or two before your immersion begins. The clinic will contact you to schedule.
Endline test: The Monday morning immediately after Day 7. The clinic will contact you to schedule.

Default 7-Day Meal Plan

Set the default dinner recipe for each day of the immersion plan. Day 1 (Monday) has an additional lunch slot since there are no leftovers from a prior dinner.

Kim's Amazon Store

These are the pantry add-ins participants order from Kim's Amazon store for the recipes they'll cook. Items that go into the dry packs are produced by you and bought in bulk on the production grocery list, so the participant pre-order automatically leaves those out.

Toggle the "Order from Kim's Amazon store" badge for any pantry ingredient. Changes save when you click Save Changes and flow immediately to the participant grocery list.

Push your current recipe edits live to every user, on every device — including your phone. Your edits stay private to you until you publish. Only approved admin accounts can publish.

Chef Kim AI Prompt

This is the system prompt that shapes how Chef Kim's AI generates recipes — the philosophy, rules, format, and voice. Edit it freely and save to update the live behavior. Changes take effect immediately for every user on their next Ask Chef Kim message.

A note on prompt iteration: Strong system prompts tend to get shorter over time, not longer. As you observe how the AI behaves, watch for rules the model is already following without being told, and consider trimming them. Adding rules to fix every odd output usually makes the prompt fight itself.

Participants

Enroll participants here with their name, phone number, and household size. Household size drives how their labeled booklet is scaled (recipe batches and grocery quantities). Your roster is saved securely to your account — only your approved admin logins can see it — and syncs across your devices.

Lunch eaters are typically adults taking last night's dinner leftovers to work; kids often don't. It must be ≤ dinner eaters.

Send SMS messages to your cohort. Messages are sent individually from your program phone number — participants receive a standard text and can reply directly to you.

Dry Pack Production

Plan and print everything you need to produce the immersion's dry packs in your own kitchen ahead of time, then deliver them at kickoff. Set how many households you're serving, and this scales the bulk grocery list, the count of each pack to make, and the per-pack recipes — all printable for production day.

Cohort Configuration

Set the dates and contact details for this cohort. This information appears in the participant booklet you generate from the Generate Booklet tab.

Identifier for this cohort (e.g. "Spring 2026 — Hendersonville"). Appears in the booklet generator summary.

Name of the clinic referring participants for this cohort.

Address or specific room where participants will gather to watch the kickoff video.

Paste an invite link to the group text thread (WhatsApp, Signal, GroupMe, or iMessage). Participants use it to join the ongoing conversation with Kim, Nelson, and the rest of the cohort. Leave blank if you're not using a group chat for this cohort.

These events appear in the Program Schedule table of the participant booklet. Edit the label, add or remove rows, or drag to reorder. Dates auto-calculate from the Program Start Date above where possible; enter manually for fixed dates.

These rows appear in the Support During the Program table of the participant booklet. Edit, reorder, or add new rows. Changes save automatically. If a row's label contains the word "phone" and the Phone Support Number field above is set, the booklet will append that number to the details.

Download a single file with this cohort's configuration and its full participant roster. The roster is stored only on this device, so keep a backup — restoring it on a new browser or machine brings everything back.

Daily check-in data from all participants. Participants who have not checked in for 2+ consecutive days are flagged.
